Trying to please all the mouths in a home can prove challenging or even impossible. For a meat lovers family, this recipe is a life saver. It is very easy to prep and throw in the crock pot and forget about until dinner time. This recipe is a favorite of mine because of the simplicity and being a comfort food by the fire on a below freezing day.
It can be exhausting trying to make everyone happy with different chili. “I don’t like veggies”…“I don’t like beans”…OMG so frustrating! Well if your family loves meat, this is a recipe for you. Keep in mind, my family’s tastes are on the spicy side so you may need to tone down the heat if you are sensitive. Start by getting out your giant crock pot and gather the ingredients below.
Ingredients:
2lbs ground beef
1 can tomato sauce 8oz
1 can tomato paste 4oz
4 sausages of your choice (I use Kielbasa)
1/2 package thick bacon
2 cups coffee
2 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp ground oregano
1 tbsp salt
1 tbsp pepper
½ tsp cayenne pepper
½ tsp cilantro leaves
1 head of garlic (yes, the whole friggin head)
1 whole ghost pepper
Instructions:
- Brown beef & drain fat.
- Cut bacon into small pieces, cook & drain fat.
- Make coffee.
- Separate garlic, mince or chop if you like. I just cut them longways and call it good.
- Take seeds out of ghost pepper, but leave whole. I want the flavor, not chunks of fire when I take a bite.
- Mix dry spices together.
- Add everything to the crock pot as you go along, then set for 6-8 hours on low.
